Air Fryer Zucchini Tots Recipe

Air fryer zucchini tots are a kid-friendly, vegetable-heavy side dish that can be put together in no time at all due to your friendly local air fryer.

Because they are more similar to crispy crowns than they are to tater tots, I actually pondered whether or not to call this dish Zucchini Crowns.

If you’ve never tried crispy crowns before, they’re quite similar to tots, but rather than having the shape of a rod, they’re more like a puck.

It provides you with a bigger crispy outer to creamy inside ratio, which is something that I love. After all, isn’t the crispy outside the main reason why we’re all there in the first place?

Ingredients Needed:

  • shredded zucchini weighing 12 ounces in total (about 2 medium).
  • 1 big egg.
  • grated parmesan cheese equaling one-half cup.
  • 1/2 cup of panko breadcrumbs in their plain form.
  • 1 minced clove of garlic, some freshly ground black pepper, and salt to taste.
  • 1 sprinkling of cayenne pepper, or more or less to taste

Instructions

Shred the zucchini while it is placed over a thin tea towel, and then squeeze as much water as possible out of the shredded zucchini.

Put the shredded zucchini, egg, cheese, and breadcrumbs in a bowl with a medium size and add the garlic. Include a pinch of cayenne pepper, as well as an eighth of a teaspoon of both salt and pepper.

Combine everything.

Remove one tablespoon of the zucchini mixture with a spoon, and using your hands, shape it into a tiny patty measuring one inch in diameter. Proceed with the rest of the zucchini mixture as before.

Set the temperature of the air fryer to 375 degrees. Spray non-stick cooking spray into the frying basket.

Once the basket has been prepared, add the zucchini tots to it.

Cook for three minutes, then flip and continue cooking for another three minutes.

To taste, sprinkle some more salt on top.
